So I decided to give you some recipes which include spinach as the main ingredient. I personally never tried them. I have only eaten spinach leaves, but some of my friends say they are great. Spinach is very versatile and can be used in dip, soup, salad, pizza topping,used to stuff shells, lasagna, or in Quiche. These hot weather recipes will keep you cool and get you out of the kitchen quickly. Here are some of my favorite summer lunch and dinner recipes, including sandwiches, hearty salads, and snacks.
Some of the ingredients, like pasta, chicken, or hard-cooked eggs, might require some cooking or grilling. Some cooking could be done the evening before, when it "might" be a little cooler. With the 4th of July on Saturday, the chef decided to go strictly Red, White, and Blue. The first recipe is in line with the theme. It is a Red, White and Blue Strawberry Shortcake which you decorate to look like the American Flag. If you are having a nighttime picnic, lighted sparklers on top makes a wonderful presentation.
Red, White and Blue Strawberry Shortcake Original recipe makes 1 9x13-inch cake. 1 (18.25 ounce) package yellow cake mix (any brand or home- made) 1-(8 ounce) container frozen whipped topping, thawed 1 pint blueberries, rinsed and drained 2 pints fresh strawberries, rinsed and sliced Prepare cake according to package directions and bake in a 9x13 inch pan. Cool completely. Frost cake with whipped topping. Place blueberries in a square in the left hand corner, and arrange sliced strawberries as stripes to make an American flag. Chill until serving. Okay, it is HOT, humid, and no one wants to be in a hot kitchen cooking lunch or supper.

Usually the week after Easter we think about how to use the leftover ham or lamb. But this year, the chef felt a bit whimsical and decided to use leftover jelly beans.
