Canadian bacon, egg, and cheese Bake.
The night before you know you will be having a rushed morning and need a quick, easy breakfast, try this.
Take a square pan and spray it with cooking spray. In a bowl, crack 6-8 eggs, 1 cup of your favorite shredded cheese, and ¼ cup milk.
Take 6 slices of Canadian bacon, and line the bottom of the square pan, overlapping them a bit.
Pour the egg mixture over the top. If you want to spice this up, add a few dashes of hot sauce, chives, or sauteed mushrooms. Then, put in the oven at 375 degrees until firm, which takes about 35 minutes. Let cool, slice into 4 pieces, and ding! Breakfast for tomorrow is served.

Cottage cheese and fruit.
1 cup of low-fat cottage cheese plus ½ cup of fruit or a dollop of sugar-free jelly can make for a sweet, easy breakfast that is filling too. If you are not a fan of the texture, try ricotta cheese instead, as it’s smoother and less moist.
Ricotta and cinnamon were made for each other, so try mixing some sugar substitute with some cinnamon, and sprinkle it over the top. Dig into 1 cup of low-fat ricotta just like you’d dig into dessert! This one is great for vegetarians who are looking to add more protein to their morning.

Ham and cheese roll-ups.
Take 2 oz of ham—like black forest kind for this easy breakfast—and 2 slices of your favorite low-fat cheese like white cheddar, as well as some thinly sliced cucumber or chives, or both!
Lay the ham slices out, overlapping them slightly. Place the cheese, thin cucumber slices, and chopped chives on top. Staring at one end, roll the ham around the toppings, and ding! You’ve got an easy breakfast to go! This one is even better if you heat it up in the toaster oven to melt the cheese slightly.

Yogurt and granola parfait. Serve this in a clear, tall glass, and you can make breakfast into art!
Using plain Greek yogurt will boost the protein content of your parfait, and since this is sometimes too tart, add a spoonful of sugar-free jelly to sweeten the deal.
If you use just ¼ cup of granola, you will add valuable fiber without increasing the calories too much. Kids will love adding berries, dried fruit, or even peanut butter to this easy breakfast! For a real treat, mix together 1 tablespoon of cocoa powder with 2 packets sugar substitute, and stir this into the plain Greek yogurt. Zing!
