"Oven-Fried" Four Cheese Chicken
1 pkg. Seasoned Panko
seasoned coating mix of choice
1/2 tsp. garlic powder
1/4 tsp. onion powder
1 cup Mexican Style finely
shredded four cheese
1 broiler-fryer chicken (3-1/2 lb.),
cut up
Heat oven to 375ºF.
Combine coating mix and seasonings in medium bowl; stir in cheese. Moisten chicken with water. Coat with cheese mixture, 1 piece at a time. Lightly press cheese mixture onto both sides of chicken. (Chicken will not be completely coated.)
Place on baking sheet sprayed with cooking spray; top with any remaining cheese mixture.
Bake 38 to 40 min. or until chicken is done (165ºF).

What goes better with chicken then potato or macaroni salad or cole slaw? There is a great variety of those dishes, but here is one that has been in the family for years and also by adding eggs, it stretches the dish to serve more people.
Potato Salad
10 white potatoes, boiled and
peeled
5 eggs
1 large onion (optional)
Mayonnaise to taste
Sat and pepper to taste
Celery seed to taste
After cooking the potatoes, peel while hot. Cut the boiled eggs in small pieces; add to the potatoes along with onions. As you already know, I don't use them, but most people like the flavor. Add your seasonings and then mix with mayonnaise to the texture you desire.
Top with a little paprika to add color.

Cranberry Pecan Sweet Potato
2 (15-ounce) cans sweet potatoes, drained
1/2 cup mayonnaise
1/2 cup salad dressing
2 Tablespoons milk
2 (6-ounce) packages cranberry pecan salad finishers
1/3 cup chopped green onion
Cut sweet potatoes into 1" cubes. In large bowl, combine mayonnaise, salad dressing, and milk and mix well. Stir in potatoes, the salad finishers, and green onion. Serve immediately or cover and chill for 3-4 hours before serving.

Easy Macaroni Salad
2 cups of macaroni
4 eggs (boiled and diced)
Salad dressing to desired
consistency
3 stalks of celery (cut into small
pieces)
Onion to taste
Mix the cooked macaroni, boiled eggs, celery and onion if using into large pan. Add the salad dressing as you desire.
Place in refrigerator for about two hours and then add a sprigs of parsley for color
