Some of the ingredients, like pasta, chicken, or hard-cooked eggs, might require some cooking or grilling. Some cooking could be done the evening before, when it "might" be a little cooler.
Tuna Pasta Salad With Dill
This flavorful pasta salad is hearty and delicious. If you don't have chopped fresh dill, a few teaspoons of dried dill weed would work as well. It's easy to prepare and makes a good main dish or side dish for summer meals. Mix together
1 can (6 to 7 ounces) tuna, flaked and drained
8 ounces cavatappi, macaroni, or rotini pasta
3 tablespoons finely chopped red onion
2 cloves garlic, mashed and finely minced
1/4 cup finely chopped red bell pepper
3 tablespoons chopped fresh dill
4 teaspoons lemon juice
3/4 to 1 cup mayonnaise
3 tablespoons sour cream
1/2 to 1 cup sliced grape tomatoes
salt and freshly ground black pepper, to taste

6 ounces macaroni, about 1 1/2 cups uncooked
1 1/2 cups diced seeded plum tomatoes
1/2 cup diced red bell pepper
1/2 cup diced red onion
1/2 cup diced peeled cucumber
1 can (about 15 ounces) black beans, drained and rinsed
1 cup cooked corn kernels, cooled and drained
2 tablespoons chopped cilantro
1 clove garlic, minced
1/2 cup mayonnaise
3 tablespoons lime juice
2 tablespoons red wine vinegar
2 tbsp. extra virgin olive oil
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon ground black pepper, or to taste
Cook macaroni in boiling salted water following package directions. Drain in a colander and rinse under cold water.
In large bowl, combine cooled macaroni, tomatoes, bell pepper, onion, cucumber, beans, corn, cilantro, and garlic, toss to blend ingredients. In another bowl combine the remaining ingredients, stirring to blend. Pour over the macaroni mixture and gently stir to blend thoroughly.
Chill and serve.
