Strawberry Shortcake
Original recipe makes 1 9x13-inch cake.
1 (18.25 ounce) package yellow
cake mix (any brand or home-
made)
1-(8 ounce) container frozen
whipped topping, thawed
1 pint blueberries, rinsed and
drained
2 pints fresh strawberries, rinsed and sliced
Prepare cake according to package directions and bake in a 9x13 inch pan. Cool completely.
Frost cake with whipped topping. Place blueberries in a square in the left hand corner, and arrange sliced strawberries as stripes to make an American flag. Chill until serving.

Another red, white, and blue recipe is a traditional strawberry pie, but keeping with the theme, you can also substitute blueberries and top with which topping. Or make the strawberry pie, top with whipped topping and add blueberries on top.
Strawberry/Blueberry Pie
Recipe makes 1 9-inch pie
1 (9 inch) pie crust, baked (again
homemade or purchased)
1 quart fresh strawberries
(If using blueberries, 2 qts. are
needed to fill the pie)
1 cup white sugar
3 tablespoons cornstarch
3/4 cup water
1/2 cup heavy whipping cream or
prepare whipped topping
Arrange half the berries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
In small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling berry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly.
Pour mixture over berries in pastry shell. Chill for several hours before serving.
In small bowl, whip cream until soft peaks form. Serve each slice of pie with a dollop of whipped cream.
Fruit Salad in Seconds
Caught in a pinch for a salad when unexpected company showed up at mealtime or you need an extra item for the picnic.
This recipe is quick and easy. You can use lemon yogurt instead of strawberry, if you wish, but then we won't have red, white, and blue.
Recipe makes 12 servings
1 pint fresh strawberries, sliced
1 pound seedless green grapes,
halved (you may use black or
red)
3 bananas, peeled and sliced
1 (8 ounce) container strawberry yogurt (for red, white and blue,
exchange strawberry to
blueberry) or add blueberries
In large bowl, toss together strawberries, grapes, bananas, blueberries, and strawberry yogurt. Serve immediately.

I know I only have offered you desserts, but if you know me, you will understand, dessert is the best.
But I guess I have to add a more nutritious item to the menu. It is just a variety of an old standard, chicken salad. But adding the extras not only adds flavor, but will keep with the theme.
Patriotic Chicken Salad
2 or 3 pounds of chicken
stewed and cut into small
chunks
1 pound red grapes (cut in half)
1 quart of blueberries
1 Cup walnuts (optional) cut small
1 Cup celery (cut small)
Mayonnaise or dressing of choice
Just stew you chicken in a large pot with onion for flavor.
After cool, cut into chunks. Throw into a big bowl then add the rest of the ingredients.
Mix with your favorite dressing. You may also use yogurt.
Serve on good quality rolls. I know it is a long stretch to make it patriotic but use your imagination.
