Did you notice they have started working on the park they are putting in some new equipment for the kids thanks to a grant Tifany Austin and Sharon Broadbents group found. This is the time of year when pumpkins are plentiful. They not only make great fall decorations, but they are also very good to eat.
Here are a few ideas how to "pumpkin up" chili or soup, macaroni and cheese or make a smoothie. Stir a cup of pureed pumpkin or you can even use canned pumpkin into chili or black bean soup to round out the flavor and thicken the texture Or how about adding it to your favor macaroni and cheese recipe? It adds flavor which you would not expect. (Children might not like it, but adults will). Or make a smoothie by blending pumpkin with vanilla yogurt, pumpkin pie spice, orange juice, frozen banana chunks and ice cubes. Really refreshing and has an unique. To make pumpkin quesadillas, mix 1/2 cup of pumpkin and 1 tablespoon of chipotle chili sauce and cover 2 flour tortillas with the mixture. Sprinkle grated cheddar over of the filling, place another tortilla on top of each, and cook them in a hot buttered skillet until the outside has turned golden brown. The filling for pumpkin French toast can be made by pulsing 8 ounces of cream cheese, 1/3 cup of pumpkin, 1 tablespoon of maple syrup, and 1/2 teaspoon of pumpkin pie spice in a food processor. To prepare the French toast, cut a pocket in the side of 4 slices of thick piece of your choice of bread, and stuff bread with 2 tablespoons each of the pumpkin cream cheese. Mix together 4 eggs, 1 cup of half and half, 1/4 cup of maple syrup, and 1/4 teaspoon of pumpkin pie spice. Add the bread to the mixture, allow it to soak for 1 minute, and cook the slices on a hot buttered skillet until they are golden brown. ************ Our final pumpkin recipe is for a dip. Pumpkin Dip 2 cloves garlic (Of course I leave out) 1 15 oz. can chickpeas, drained and rinsed 1 15 oz. can pure pumpkin 2 tsbp. almond or peanut butter 1 tsp. ground cumin Juice of one lemon 1 tsp. olive oil 1/2 tsp. salt Dash cayenne pepper (again optional) Puree all ingredients, in food processor or blender. The other day I was talking to a rather wealthy woman who was bemoaning the fact that she was “taking quite a hit” in the stock market. I, of course, commiserated with her. Finances are no small matter for us as we struggle through to make ends meet. We want to leave something for our children. We desire to live comfortably in our retirement years. This is all well and good. There is nothing particularly sinful or even selfish about these desires, unless we exclude charitable giving from our financial decisions. This is the basis of Biblical command to tithe. Our readings this weekend we call to mind the widow who forgot herself in her concern for the poor, and, thinking only of the life to come, gave away all her means of subsistence. I’m happy to report that our trip to Geisinger Medical Center in Danville last Tuesday was a success. The orthopedics department’s director, Dr. Suk, is serving as Ron’s doctor and following his review of his latest CT scan, he concluded that quite possibly he can help Ron’s disconnected collarbone with surgery. Not a plate, not a bone or joint replacement, but rather an artificial “loop” – like a tendon, to pull the collarbone back into place next to his sternum with the hopes it will fill in with blood and scar tissue. He asked Ron about the upcoming holidays and when would be a good time to schedule. Ron said “after the firewood is all cut for the winter, and after deer hunting season. Let’s make it January”. Dr. Suk said “perfect – I agree”. He’s scheduled for a prelim appointment January 5th. Please pray for Ron’s full recovery. The party reacted by pulling out of a debate scheduled for next February on CNBC’s parent, NBC.
By Charles Rockwell Getting out of bed at 5 a.m. is not one of my favored activities, but our dog "Pickwick" is up and raring to be on his early walk. It is pitch dark but a compensation is the view of the "Morning Stars." One recent morning, I met up with the Whelden brothers. They were enjoying the sight also. Then on the TV Channel 16, Tom Clark said they were Venus, Jupiter, and Mars. With the change of time they are still visible but higher in the sky. From the Holy Bible Revelations 22: 16, the Lord says "I am the root and the offspring of David, and the bright and morning star." By Richard & Joyce Pratt This past week has been a typical Halloween weather. Good weather for sports as well. Thursday night was the night for bagging candy for Truck or Treat. With a good crowd to help, we got it done fast. Thank you to all who helped with that and to those who helped giving them out on Saturday night after the parade. Those who went downtown to the parade all came back with the report of a very good parade. Back here at Hillcrest, the trick or treaters were greeted at the door by Goldilocks, the official greeter.
