Lunch Box Pita Pockets
Kids can assemble these pita meals themselves, right there at the lunch table
1/2 Cup deli ham, chopped
Honey Ham
1/2 Cup shredded lettuce
1/4 Cup shredded carrot
1/4 Cup ranch dressing
1 pita bread round, cut in half
Place ham, lettuce, and carrot in a resealable plastic bag. Pour ranch dressing into a small resealable container. Wrap pita bread in plastic wrap.
Pack the ham mixture, ranch dressing, and pita bread along with a spoon in a lunch box or bag until lunch time.
Assemble pita pocket by spooning the ham mixture into each pita half and drizzling the ranch dressing on top.
Chef's note: variations include chopped pepperoni, mozzarella cheese, and pizza sauce; chopped bacon, shredded lettuce, chopped tomato, and Ranch dressing; or sliced apples and peanut butter.
This is a fun snack kids can make. It consists of arranged celery, peanut butter, and raisins
5 stalks celery
1/2 cup peanut butter
1/4 cup raisins
Cut celery into lunch box size and spread peanut butter on each one.
Arrange the raisins (I used dried cranraisins) to look like ants crawling up the celery stalk. You could also use cream cheese, but you would have to keep that cooler than the peanut butter.
When sitting at the lunch table, they make a great conversation piece. It is nutritious and the kids don't know it.

As you might be able to tell by the recipes, I like to use peanut butter for lunches. Children usually like it and it is good for them.
This recipe is a variation on a ordinary peanut butter sandwich.
Peanut Butter and Apple Sandwich
1 tablespoon peanut butter, or
to taste
1 small apple - peeled, cored and
shredded or sliced thinly
2 slices (4 if you are hungry)
favorite bread.
lemon juice (this is to keep apple
from turning brown) optional
Spread a thin layer of peanut butter onto one side of each slice of bread. Place shredded apple onto the peanut butter, and place the other peanut buttered side of bread on top. Did you make it?
Add this to the recipes you've made.
*Note: for an even healthier idea, leave out the bread. Use sliced apples to dip into a little container of PB or cut apple in half, core, then fill each side with PB & put back together before bagging
Try this combination on a tortilla and eat as a wrap. You could also try, for a change, using shredded celery or carrot in place of the apple.
